Eye popping, jaw dropping basmati rice

This super colourful basmati rice dish is not only a treat for the eyes and a nice addition to any dinner party, it is also seasonal, packed with goodness and a perfect immune boosting treat.

Beetroots are a health food titan being low in fat, full of vitamins and minerals and packed with powerful antioxidants. Cultivated since Roman times, this spectacular vegetable is an excellent source of folic acid and a very good source of manganese and potassium.

According to the traditional Chinese medicine system we’re currently influenced by the metal element which brown rice corresponds to. It is very important for our intestinal health and is rich in protein, unsaturated fatty acids, essential oils, minerals and vitamins.

Recent research has revealed that turmeric, which has been used for more than 2500 years and long known for its anti-inflammatory properties, can be helpful in the treatment of many different health conditions from cancer to Alzheimer’s disease.

All this goodness and it’s a doddle to prepare and cook, so go on, give it a go, when you see it on your plate and taste it you’ll be so happy you did.

1 small onion  chopped
1 clove garlic chopped
1 small beetroot, cut into small chunks
1 small carrot cut into small chunks
½ tsp turmeric
¼ tsp salt
1 cup brown basmati rice
2 cups water

Fry the onion and garlic until translucent. Add the turmeric, then the rest of the ingredients and bring to boil. Simmer until the water has been absorbed. Leave rice to stand for ten minutes.
